- ½ cup butter
- ½ cup dark brown sugar
- 1 egg (beaten)
- 1 tsp vanilla extract
- 1 ½ cups all-purpose flour
- 2 Tbsps cocoa powder
- 6 ozs Chocolate (60% cocoa solids, cut into chunks)
Preparation steps
1.
Heat the oven to 190°C (170° fan) 375°F gas 5. Line 2 baking trays with non-stick baking paper.

Beat the butter and sugar in a mixing bowl until light and fluffy. Beat in the egg and vanilla until smooth.
3.
Sift in the flour and cocoa and gently stir into the mixture with the chocolate chunks.
4.
Drop tablespoonfuls of the mixture, well apart, onto the baking trays. Bake for 12-15 minutes until just firm. Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
