½ cup fine Cornmeal
cup Rice flour (plus extra for dusting)
cup Almond flour
½ tsp cream of tartar
¼ tsp baking soda
3 Tbsps clear honey
¼ cup dairy-free margarine (or vegan butter, melted and cooled)
1 egg yolk
3 Tbsps chopped almonds
3 Tbsps dairy-free Chocolate chip (or chunks)

Preparation steps

1.

Put the cornmeal, rice flour, ground almonds, cream of tartar and baking soda into a mixing bowl and stir well together.

Stir in the honey, margarine, egg yolk, almonds and chocolate chips and mix to a firm dough. Wrap in cling wrap and chill for 30 minutes.

Heat the oven to 180°C / 350°F. Line 2 baking trays with non-stick baking paper.

Roll out the dough on a surface dusted with rice flour. Stamp out circles using a 2-1/2" round cutter. Place the biscuits on the baking trays, allowing room for spreading.

Bake for 8-10 minutes until golden brown. Leave to cool for a few minutes on the trays then place on a wire rack to cool completely.
