Mexican Corn Dip

canned Sweet corn (drained)
large, Hass Avocado
Vine tomatoes (seeded and diced)
red chile pepper (cut into rings)

Heat the oil in a pan and fry the sweetcorn and the onion until lightly brown, then set aside.
Just before serving, halve and pit the avocados, and then dice the flesh. Mix with the sweetcorn, onions, tomatoes, chilli, coriander, and lime juice and season with salt.
Serve with corn tortilla chips if desired.
