- 1 Tbsp Oil
- 4 cups boneless, skinless Chicken breasts (cut in bite-size pieces)
- salt (to taste)
- peppers (to taste)
- 1 cup water
- 1 cup chunky Salsa (mild, medium or hot)
- 1 pkg Taco seasoning
- 8 Taco shell
- 1 cup Lettuce (shredded)
- 1 cup Tomatoes (diced)
- ½ cup monterey jack cheese (or cheddar)
- ½ cup black Olives (pitted and sliced)
- ½ cup Sour cream (optional)

Preparation steps
1.
Heat oil in a large non-stick skillet on medium-high heat. Add chicken; season with salt and pepper, stir to coat chicken. Cook until done, about 6-8 minutes.

Add water, salsa, and taco seasoning mix to chicken. Stir and bring to a boil. Cover, reduce heat to low, and simmer for about 5 minutes.
3.
Spoon chicken mixture into the taco shells, add shredded lettuce, tomatoes, cheese, olives and sour cream, if using. Serve.
