1 shallot
2 Tbsps chopped parsley
2 Tbsps minced Basil
400 grams Ground steak (for tartar)
2 tsps chopped thyme
2 eggs
4 Tbsps rolled Oats
salt
freshly ground peppers
2 Tbsps olive oil
250 milliliters Vegetable broth
4 Tbsps Crème fraiche
1 tsp grated Lemon peel

Preparation steps

1.

Peel and finely chop shallots. In a bowl, combine shallots, parsley, basil, ground beef, thyme, eggs and oatmeal. Season with salt and pepper and mix well. Form mixture into small meatballs. In a pan, cook meatballs in oil until browned. Remove and keep warm.

2.

Deglaze pan with broth. Stir in creme fraiche and cook sauce until creamy. Stir in lemon zest. Serve sauce with meatballs and spring vegetables.
