1 fresh Salmon (from the middle piece - about 400 grams, with skin)
1 lemon
150 grams coarse Sea salt
75 grams sugar
1 Tbsp sichuan pepper
2 Tbsps black peppercorns
2 Oranges

Preparation steps

Rinse the salmon, pat dry and possibly remove remaining bones with tweezers.

Rinse the lemon in hot water, wipe dry and finely zest. Squeeze the lemon. Mix the lemon zest with sea salt and the sugar. Add approximately one-third the salt mixture on the bottom of a flat dish (about 20x25 cm) (approximately 8x10 inch). Place the salmon skin side down. Cover with the remaining salt mixture and the peppercorn. Rinse the oranges in hot water, pat dry, cut into slices and place on top. Drizzle the lemon juice. Cover the salmon with foil. Place the salmon for 1-2 days in the refrigerator. Approximately every 8 hours, rotate the salmon.

To serve, remove the salmon from the marinade, remove the orange slices and salt mixture. Decorate if desired for serving with orange slices and some peppercorns.
