4 large, red Bell pepper (washed)
2 cloves garlic cloves (minced)
1 ½ Tbsps Red wine vinegar
0.333 cup good-quality extra virgin olive oil
1 tsp fresh Basil (finely chopped)
1 tsp fresh parsley (finely chopped)
¼ tsp crushed Red pepper flakes
kosher salt (to taste)
freshly ground Black pepper (to taste)
1 loaf crusty Bread (optional)

Preparation steps

Preheat oven to 450 degrees F.

Place the whole red peppers in the oven directly on the middle rack. Roast for about 15 minutes, or until the outside skin is well scorched. Remove peppers from oven and immediately place in a bowl covered with plastic wrap. Allow the peppers to sweat and cool.

Once cooled, remove the skin with your fingers. Cut the peppers in half, remove stem, core and seeds. Slice into strips 1 1/2 to 2-inches thick.
4.
Place peppers in a serving bowl. Add all the remaining ingredients. Gently stir to coat peppers. Taste and adjust seasoning as needed. Serve at room temperature with crusty bread, if desired.
