500 grams Cherry tomatoes
2 Oranges
1 Lettuce
2 tsps pickled, green peppercorns
3 Tbsps lemon juice
250 grams Yogurt (0.1% fat)

Preparation steps

1.

Peel pineapple and cut into quarters lengthwise, core and cut into thin slices. Peel shallots and cut into thin slices. Rinse and halve tomatoes. Peel oranges with a sharp knife, taking care to remove as mush pith as possible. Cut out orange segments,collecting all resulting juice. Squeeze remaining oranges to get more juice.

Rinse and spin dry lettuce and tear into bite-sized pieces.

Mix all prepared salad ingredients and green peppercorns in a bowl.

Combine lemon juice with collected orange juice, yogurt and apple juice. Season with salt and pepper. Drizzle salad with the dressing and garnish with sliced lemon. Serve.
