600 grams Cod
1 ½ shallots
3 Tbsps olive oil
110 milliliters fish stock (from a jar)
1 lemon (Juiced and zested)
2 Saffron
1 tsp honey
2 Tbsps small Caper
salt

Preparation steps

Peel shallots and chop finely. Heat 2 tablespoons of olive oil in a pan and saute shallots until translucent. Add saffron, fish broth, lemon zest and juice and simmer for about 5 minutes. Season with salt and pepper and capers, remove from heat.

Rinse fish fillets, pat dry and cut into pieces, season with salt and pepper. Heat reamining oil in a pan and cook fish for about 2-3 minutes per side or until cooked through. Add fish to the sauce let stand for about 15 minutes. Serve warm or cold.
