1 ½ ozs cooked Whole Wheat Noodles
¼ red pepper (deseeded and cut into small fine strips)
2 Snap pea (finely sliced on the diagonal)
1 scallion (finely sliced)
2 tsps sunflower oil
½ Chicken breast (cut into thin strips)
5 Tbsps Coconut milk

Preparation steps

Put the noodles, pepper, snap peas, and spring onion into a pan of boiling water. Cook for 3–5 minutes until the noodles are cooked and the vegetables are tender.

Heat the oil in a small non-stick frying pan. Stir-fry the chicken for 5 minutes until cooked through.

Drain the noodles and vegetables, reserving a little liquid. Add the noodles and vegetables to the chicken in the pan.

Stir in the coconut milk and a little of the cooking liquid to thin to the desired consistency and serve.
