¾ cup kale (washed and sliced)
¾ cup Watercress
¼ small Red onion (finely sliced)
1 ½ Blood orange (segmented)
2 teaspoons Pomegranate seed
1 Avocado
1 Fennel bulb (sliced into super thin strips)
2 tablespoons slivered almonds (lightly toasted)
1 cup Goat cheese
2 teaspoons freshly chopped Dill
1 ½ tablespoons Champagne vinegar
½ tablespoon olive oil
1 lemon (juiced)
½ teaspoon Dijon mustard
½ teaspoon honey

Preparation steps

1.

Combine kale, watercress, almonds, onion, orange, fennel, avacado, pomegranete seeds and toased almonds in a large bowl

2.

Shake together the vinegar, oil, mustard, dill, honey, lemon salt and pepper

Toss dressing into salad and sprinkle with goat cheese and almonds
