- ¾ cup Kale (washed and sliced)
- ¾ cup Watercress
- ¼ small Red onion (finely sliced)
- 1 ½ Blood orange (segmented)
- 2 tsps Pomegranate seed
- 1 Avocado
- 1 Fennel bulb (sliced into super thin strips)
- 2 Tbsps slivered almonds (lightly toasted)
- 1 cup Goat cheese
- 2 tsps freshly chopped Dill
- 1 ½ Tbsps Champagne vinegar
- ½ Tbsp olive oil
- 1 lemon (juiced)
- ½ tsp Dijon mustard
- ½ tsp honey

Preparation steps
1.
Combine kale, watercress, almonds, onion, orange, fennel, avacado, pomegranete seeds and toased almonds in a large bowl
2.
Shake together the vinegar, oil, mustard, dill, honey, lemon salt and pepper
3.
Toss dressing into salad and sprinkle with goat cheese and almonds
