- 800 grams Mutton (boneless neck)
- 2 large, white onions
- 3 Tbsps vegetable oil
- 600 milliliters Beef broth
- 2 bay leaves
- 800 grams starchy potatoes
- salt
- freshly ground peppers
- 2 Tbsps freshly cut parsley

Preparation steps

Rinse the meat, pat dry and chop. Peel the onion and cut into thick rings. Heat the oil in a large saucepan, sauté the meat in portions, and remove to a bowl. Cook the onions in the same pan, add meat back to the pan and season with salt and pepper. Pour in the broth to deglaze.

Add the bay leaves and cook (covered) over low heat for about 1 hour. Peel the potatoes, rinse, cut into eighths and add to the meat. Bring to a boil over high heat, turn down and finish cooking over low heat for another 30 minutes. Season with salt and pepper. To serve, spoon the stew into bowls and sprinkle with parsley.
