- 800 grams lamb (leg meat)
- 4 onions
- 2 carrots
- 400 grams waxy potatoes
- 30 grams clarified butter
- 1 ½ Tbsps Pastry flour
- 600 milliliters Beef broth
- salt
- freshly ground peppers
- 1 Tbsp freshly chopped parsley

Preparation steps
1.
Rinse the meat, pat dry and cut into small slices. Peel the onions and chop finely. Peel and rinse the carrots and potatoes and cut into large pieces. Heat the butter in a saucepan and brown the meat on all sides. Remove from the pan and set aside.

Put the onions in the pan, fry until golden brown, sprinkle with flour and pour in the broth. Mix well. Return the meat to the pan, season with salt and pepper and simmer for 1 hour on medium heat.
3.
Add the vegetables and simmer for another 25 minutes. Season again to taste and serve sprinkled with parsley.
