Preparation steps

1.

Separate the eggs. In a bowl, whisk the yolks with 30 grams (approximately 1 ounce) of sugar until fluffy. In a separate bowl, beat the egg whites with 1 pinch of salt until stiff. Sprinkle the remaining sugar over the egg whites and beat until the whites are very stiff and shiny.

Fold the egg whites into the egg yolk mixture. Mix the flour with the cornstarch, and fold it into the yolk mixture.

Preheat the oven to 180°C (approximately 350°F). Line a 20 cm (approximately 8-inch) springform pan with parchment paper. Pour the batter (into the pan and smooth the top and bake until a toothpick inserted in the center comes out clean, about 35 minutes.

Remove from the oven, allow to cool and release it from the mold. Cool completely on a wire rack.

Meanwhile, in a bowl, stir together the quark, lemon juice and vanilla sugar.

Cut four 5 cm (approximately 2-inch) circles from the cake and fit them into put in four 6 cm in diameter (approximately 2 1/2-inch) in diameter glasses. Spoon the quark mixture on top and refrigerate 2 hours.

7.

Meanwhile, peel the kiwis , halve lengthwise and thinly slice. Coarsely chop the pistachios. Place the kiwis on top of the quark mixture and sprinkle with the pistachios. Serve immediately.
