60 grams Shredded coconut
30 grams Sunflower seed
½ Vanilla bean (seeded)
40 grams Cashews
3 Tbsps hulled Pumpkin seed (pepitas)
3 Tbsps honey
3 Tbsps water
40 grams raisins
3 Tbsps dried Cranberry

Preparation steps

1.

Preheat the oven to 130°C (approximately 265°F). Line a baking sheet with parchment paper.  

2.

Melt the butter in a saucepan over medium heat. Stir in the honey, vanilla bean seeds and water. 

3.

Combine the rolled oats, coconut, sunflower seeds, cashews and pumpkin seeds in a large bowl. Drizzle the butter mixture over everything and mix until the ingredients are well coated. Spread onto the prepared baking sheet and bake for 35 minutes. Stirring several times. Remove from the oven, allow to cool and mix in the cranberries and raisins. Store in an airtight container.
