- 500 grams honey
- 200 grams Oats
- 200 grams whole Wheat flake
- 80 grams Sunflower seed
- 50 grams chopped Shelled peanut
- 20 grams Sesame seeds
- 100 grams dried raisins
- 200 grams dried Cranberry
- 1 generous pinch Vanilla bean
- 1 pinch salt
- 2 eggs
- 1 Tbsp Peanut butter
Preparation steps
Combine 125 ml (approximately 1/2 cup) water with honey in a pot. Heat until honey has dissolved.
Meanwhile, combine rolled oats and wheat flakes with sunflower seeds, peanuts, and sesame seeds in a large bowl. Add dried fruit, vanilla bean seeds and salt. Add honey-water and toss to combine. Separate eggs. Stir in yolks and peanut butter and let stand 10 minutes.
Preheat oven to 140°C convection (approximately 300°F). Line a baking sheet with parchment paper.
Whip egg whites until stiff and fold into granola mixture. Spread mixture evenly on the baking sheet and cover with plastic wrap. With a rolling pin, roll mixture firmly. Remove plastic wrap and bake until golden, 20-30 minutes. While still hot, cut into pieces. Wrap in wax paper and pack in a school lunch or serve as a snack.
