This granola bar recipe is a perfect pick-me-up when your energy levels are down. It contains oats, sugar, and nuts, which provide you with carbohydrates, fiber, fats, and protein. Even though it is a small snack, it will help to fill you up quickly. 

You can always substitute the sugar for coconut sugar and the flour for almond flour to have a slightly lower sugar content and higher fiber and nutrient content.

3 Tbsps Whole wheat flour
2 ozs chopped Hazelnuts
3 ozs chopped, peeled almonds
3 Tbsps cane sugar
4 ozs butter (or coconut oil)
1 generous pinch cinnamon
3 ozs Apricot jam
4 Tbsps honey
2 Tbsps raisins

Preparation steps

1.

Preheat the oven to 175°C / 350°F. Mix apricot jam and 2-3 tablespoon honey, if necessary slightly heat honey and let cool again. Mix oats, hazelnuts, almonds, cinnamon, and sugar in a bowl. Remove about a quarter of the mixture and set aside.

Mix remaining cinnamon sugar mixture with whole wheat flour, raisins, melted butter and 1-2 tablespoon honey. Pour mixture into a baking pan lined with parchment paper, spread flat, brush with apricot jam and honey mixture and sprinkle with reserved oat-nut mixture.

Bake in preheated oven about 30 minutes until golden brown. Remove from oven. Cut into bars with a sharp knife and remove. Let cool and store in a sealed container.
