Hearty Orange and Onion Salad with Artichokes

- 4 Artichoke bottoms (from a jar)
- 4 large Oranges
- Juice (of a lemon)
- 8 mint
- 2 Red onions
- 2 garlic cloves
- 2 Tbsps olive oil
- freshly ground peppers
Drain artichokes and cut small pieces. Rinse orange. With a sharp knife, cut off peel and bitter white pith from oranges. Cut into small pieces, taking care to remove any seeds.
Rine mint, shake dry and cut into thin strips. Peel, halve and slice onions. Peel garlic and press through a garlic press. Combine garlic with oil, lemon juice, and salt and pepper to taste.
Toss all ingredients with dressing and divide among plates. Garnish with mint.
