- 4 lobsters (each 16-18 ounces)
- 2 Tbsps olive oil
- 2 ozs butter
- 2 cloves fresh garlic cloves (minced)
- 2 Tbsps fresh lemon juice
Boil a large pot of salted water. Put the lobster head first into the bubbling water and cook for about 10 minutes. Remove from the water and plunge into ice water, then separate the lobster tail from the head and cut in half lengthwise (use grill scissors if available). Brush the lobster meat with oil and brown on the hot grill for about 5 minutes.
Melt the butter in a hot pot. Peel garlic, finely dice and add to the butter. Season with salt.
Serve the lobster tails on a large platter and drizzle with a little butter. Drizzle with lemon juice and serve. Serve the rest of the butter separately.
