Grilled Lobster with Passion Fruit Sauce
This light entree is packed with protein and nutrients such as zinc and copper from the lobster.
You can also pair this fruit sauce with grilled shrimp instead of lobster.
Use scissors to detach and break lobster tails. Halve lobster tails lengthwise. Rinse lime in hot water, dry, peel using vegetable peeler and cut peel into fine strips. Halve passion fruits and scrape out pulp.
Place lobster tails with tray outward on an oiled grill grate. Add lobster claws and cook both on hot grill for 6-8 minutes.
Heat olive oil in pan and briefly fry lime peel. Deglaze with rum and passion fruit puree. Allow to simmer, then gradually stir in cold butter. Halve and seed avocados, detach flesh and cut into thin slices. Drizzle avocado slices with a little lime juice. Remove lobster from grill, detach meat and serve lobster meat with avocado on plates. Sprinkle with sea salt and pepper and drizzle with passion fruit sauce. Serve garnished to taste with cress.
