9 cups green Asparagus (trimmed)
8 cloves garlic cloves (peeled)
2 Tbsps lemon juice
¼ cup olive oil
½ handful Basil (roughly chopped)
½ handful thyme (leaves picked, reserving a few whole stalks for garnish)
Parmesan (shaved, to garnish)

Preparation steps

1.
Remove the woody ends of the asparagus and peel the lower third of the stalks. Bring a large pan of salted water to the boil. Blanch the asparagus and garlic for approx. 5 minutes then refresh in cold water.

Heat the barbecue.
3.
Whisk together the lemon juice, oil and herbs, and season with salt and ground black pepper.
4.
Cook the asparagus and garlic, ideally in an aluminium tray, on the barbecue for approx. 8 minutes, turning. Brush regularly with the herb oil.
5.
To serve, arrange on plates, drizzle with the remaining oil and garnish with thyme and shavings of parmesan.
