- 1 can Snail (24 pieces)
- 24 Snail shells
- 1 bunch parsley
- 1 bunch Chervil
- 4 sprigs thyme
- 2 shallots
- 2 garlic cloves
- 4 ozs softened butter
- salt
- freshly ground peppers
- 2 Tbsps lemon juice

Preparation steps
1.
Preheat the oven to 350˚F. Drain the snails and place each inside a shell.
2.
Rinse the parsley, chervil and thyme, shake dry, remove leaves and finely chop. Peel and finely chop the shallots and garlic.
3.
In a bowl, beat the butter until creamy. Beat in the herbs, shallots and garlic, and season with salt and pepper to taste, and the lemon juice.
4.
Fill the opening of each shell with the herb butter. Place the snails in a baking dish and bake until the butter starts to foam. Serve immediately with triangles of toast.
