150 grams Lettuce (such as oak leaf. Lollo rosso)
4 Tbsps white balsamic vinegar
4 Tbsps lemon juice
salt
1 pinch sugar
6 Tbsps olive oil
600 grams Monkfish (ready to cook)
8 King prawn (ready to cook deveined and peeled down to the tail segment)
1 Tbsp honey
Sea salt
Italian Fresh herbs (dried)
Red pepper flakes
Chervil (for garnishing)

Preparation steps

Preheat the oven with a grid (including drip pan) on grill.

Rinse salad greens and spin dry, tear into smaller pieces if needed. Combine balsamic vinegar with 1-2 tablespoons of lemon juice, season with salt and sugar. Add 4 tablespoons of oil and whisk well.

Rinse monkfish and prawns and pat dry. Cut monkfish into cubes. Thread monkfish and prawns onto 8 wooden skewers. Combine honey with remaining lemon juice and oil and brush fish with the mixture. Grill under a broiler on a grilling grid for 4-5 minutes, turning over once and watching carefully.

Arrange salad greens on plates and drizzle with dressing. Top with grilled monkfish and prawns skewers and sprinkle with a little sea salt, dried herbs and red pepper.

Garnish with parsley and serve.
