Ingredients

For the lamb skewers
400 grams Lamb fillet
For the marinade
1 tsp green Curry paste
200 milliliters Coconut milk (Canned, unsweetened)
½ Red chili pepper (chopped)
1 Lime (Juice and zest)
1 Tbsp soy sauce
1 Tbsp cornstarch
For the king prawns
6 King prawn (peeled, ready to cook)
3 Tbsps olive oil
3 Tbsps Lime juice
1 pressed garlic clove
salt
For the dip
125 grams Whipped cream
100 grams Crème fraiche
1 Lime (Juice and zest)
2 tsps freshly grated ginger
½ bunch cilantro

Preparation steps

1.

For the lamb skewers, cut lamb fillet into strips. For the marinade, mix all ingredients together, mix with lamb strips and marinate  for 3-4 hours.

Remove lamb from marinade and place on 6 wooden skewers. Grill on a hot grill for 3-4 minutes on each side.

For the king prawns, mix olive oil with lime juice, garlic and salt. Marinate king prawns for 30 minutes. Remove from marinade and grill on a hot grill for 3-4 minutes on each side.

For the dip, mix cream and creme fraiche. Add lime zest, lime juice and ginger. Rinse cilantro and finely chop. Add to dip and season with salt and pepper.

Serve lamb skewers and king prawns with sauce.
