50 grams fresh ginger
1 Tbsp pickled, green peppers (from a jar)
cilantro
8 Tbsps olive oil
16 shallots
16 King prawn (Raw, with peel)
salt

Preparation steps

1.

Rinse orange with hot water and pat dry. Finely grate zest of orange. Squeeze juice from orange. Peel ginger and cut into thin slices. Crush pickled green pepper. Rinse cilantro, shake dry and pluck leaves from stems. Mix orange zest in a bowl with orange juice, olive oil, ginger, green pepper and cilantro.

Peel shallots and halve or quarter depending on size. Peel prawns down to the tail, devein, rinse and pat dry.

Lightly oil wooden skewers. Alternately stick prawns and shallots on wooden skewers.

Place prepared skewers on a baking sheet (or in a flat dish). Pour orange juice mixture over prawns. Marinate 1 hour in the refrigerator and turn prawns over 2-3 times.

5.

Cook prawns under a preheated oven broiler, watching carefully, for 2 minutes on each side. Remove from the oven and season with salt. Serve immediately.
