Grilled Chicken Sandwich with Herb Cream Cheese and Onion Rings

- 1 Tbsp Pastry flour
- vegetable oil (for frying)
- 300 grams Chicken breasts
- 1 Red onion
- 4 leaves Lollo Bionda
- 80 grams cream cheese
- 1 Tbsp freshly chopped Basil
- 1 splash lemon juice
- 40 grams sun-dried Tomatoes (in oil, from a jar)
- 4 Hamburger bun
Preparation steps
Peel onions and cut into rings. Season with salt and pepper and mix with flour. In a heavy skillet, heat oil and fry in portions until golden and crispy for about 3-4 minutes. Drain on paper towels.
Rinse chicken breasts and pat dry. Cut into four slices and season with salt and pepper. Heat 1 tablespoon oil in a grill pan and cook for about 5 minutes on both sides.
Peel red onion and cut into rings. Rinse lettuce and spin dry and tear or cut into pieces. Mix cream cheese and basil and season with lemon juice, salt and pepper. Drain sun-dried tomatoes and pat dry and chop coarsely.
Slice buns horizontally and place lettuce, onion and chicken on botttom half of bun. Spread cream cheese over chicken and sprinkle with tomatoes. Add onion rings and place top half of bun on sandwich. Serve immediately.
