- For the noodles
- 400 grams Pastry flour
- salt
- 4 eggs
- Nutmeg
- 1 Tbsp vegetable oil
- 125 milliliters milk
- 4 Tbsps butter
- 200 grams Emmentaler cheese (grated)
- For the fried onions
- 4 onions
- 5 Tbsps Pastry flour
- vegetable oil (for frying)
Preparation steps

For the noodles: bring salted water to a boil in a large pot.

Combine flour, eggs, nutmeg, milk, oil and salt in a bowl and knead to a firm dough. Scrape dough with a spaetzle planer into boiling salted water and cook for a few minutes. As soon as noodles float to the surface, they are cooked.

Remove noodles with a slotted spoon from the water, drain well. Heat butter in a large nonstick pan and toss noodles and cheese well, season with salt and pepper.

For the onions: peel onions and cut into thin rings. Sprinkle with flour. Heat about 1 cm of oil (approximately 1/2 inch) in a large pan and fry onions until golden brown. Top cheese noodles with onion rings and serve.
