Ingredients
- For the poultry
- 1 chicken (approx 1.4 kg)
- 1 garlic clove
- 1 organic lemon
- ½ tsp Curry powder
- 1 tsp honey
- salt
- freshly ground peppers
- 3 Tbsps olive oil
- 3 sprigs thyme
- For the pineapple
- 1 can Pineapple (850g)
- 1 Tbsp brown Rum
- Red pepper flakes
- cane sugar (for coating)
Preparation steps
Rinse chicken, pat dry and cut into 8 pieces with poultry shears. Peel and finely chop garlic. Rinse lemon in hot water, pat dry and zest. Squeeze juice from the lemon. Mix juice and zest with curry, garlic, honey, salt and pepper to taste, and oil. Strip leaves from thyme sprigs and stir into marinade. Transfer chicken pieces to a bowl and coat with marinade. Cover and marinate 2 hours in the refrigerator.
Drain pineapple in a colander. Combine rum and some red pepper flakes in a bowl. Add pineapple and marinate about 30 minutes.
Remove chicken pieces from marinade. Place on a hot grill. Cover grill and cook, turning halfway through and brushing with marinade, about 20 minutes.
Sprinkle sugar in a shallow dish. Drain pineapple and roll in sugar. Let stand approximately 5 minutes. Grill pineapple about 4 minutes. Serve the chicken with pineapple slices.
