Preparation steps

Peel and dice the potatoes. Cook in boiling salted water for 15 minutes, until soft. Drain, let dry, then mash with a fork.

Peel the garlic. Finely dice 2 cloves, then crush into a paste with a little salt. Slice the third clove and cook until golden brown in a little oil.

Mix the olive oil and lemon juice into the potato puree, stirring constantly. Only add enough oil until a creamy mixture has formed. Season to taste with salt and pepper, garnish with the sliced garlic, and serve.
