1 ¼ cups Bulgur
cup olive oil
1 cup boiling water
1 Plum tomato (seeded and finely diced)
1 red pepper (finely diced)
½ small Cucumber (finely diced)
1 Tbsp mint (finely sliced)
Oranges (juiced)
1 Orange (segmented with segments finely diced)
salt

Preparation steps

1.
Coat the bulgur wheat in 50ml of the olive oil and pour over the boiling water. Cover the bowl tightly with clingfilm and let it stand for 10 minutes.
2.
Drain the bulgur wheat through a sieve, pressing on it to remove any excess water. Transfer to a large mixing bowl and toss with the pepper, tomato, red onion, cucumber.
3.
Add the rest of the olive oil, orange juice and the diced orange. Toss well again and season to taste.
4.
Garnish with a the sliced mint and mint sprigs. Serve immediately.
