¼ cup butter
4 Leeks (green ends discarded and finely sliced)
2 floury potatoes (peeled and diced)
2 sprigs thyme
3 ½ cups chicken (or vegetable stock)
½ cup milk
½ cup double cream
salt
White pepper
½ bunch Chives (chopped)

Preparation steps

1.
In a large pan melt the butter and when foaming add the leeks. Cook gently over a low heat until soft and slithery.
2.
Add the potatoes and thyme and cook for a couple of minutes, then add the stock and milk, bring to a simmer and cook gently for 20-25 minutes, until the potatoes are soft.
3.
Remove the thyme stalks and whiz in a blender until smooth.
4.
Return to the heat and reheat, seasoning carefully. Serve with chives sprinkled on top.
