- 21 ozs salt cod (oak in water overnight)
- 3 cups floury potatoes (peeled and cubed)
- 2 Tbsps butter
- 1 onion (finely chopped)
- 2 Tbsps freshly chopped parsley (finely chopped)
- small, red chili peppers (finely chopped)
- 3 eggs
- vegetable oil (for frying)

Preparation steps
1.
Drain and remove the salt cod, remove any skin or small bones still present and finely flake the fish.
2.
Boil the potatoes until tender and fluffy; 20-25 minutes. Mash with the butter, salt and pepper.
3.
Add the chili, chopped parsley, onion, flaked fish, and mix with the mashed potatoes.
4.
Separate the egg yolks form the whites and put the whites aside for later. Beat the egg yolks and mix into mashed potato.
5.
Whisk the egg whites until they form soft peaks and then fold into the potato mixture.
6.
Heat the frying oil in a deep saucepan to 180°C | 350F. Make small balls out of the potato and fish mixture and fry them a few at a time until golden brown.
7.
Drain them on kitchen towel, garnish with parsley and serve as a starter or with a salad as a main course.
