4 Chicken legs
4 ozs Fontina cheese (cut into 4 even slices)
¼ cup sunflower oil
salt

1 Tbsp dried thyme

Preparation steps

1.
Pre-heat the oven to 200°C | 400F | gas 6.
2.
Using a sharp knife, carefully de-bone the thigh of the chicken legs, working the meat away from the bone.
3.
Arrange the cheese where thigh bone was and secure by folding the thigh meat around it. Tie the thigh part of the legs using kitchen string.
4.
Season well with salt, pepper and the dried thyme.
5.
Heat the oil in a large ovenproof saute pan and sear the legs until golden all over. Transfer to the oven and roast for a further 30-40 minutes until cooked through.
6.
Serve immediately.
