1 small chicken (cleaned, with excess fat trimmed)
2 heads garlic (1 head with cloves separated)
3 tablespoons olive oil
1 bay leaf
½ teaspoon ground Nutmeg
½ teaspoon ground Black pepper
ground Cumin

Preparation steps

1.
Pre-heat the oven to 200°C | 400F | gas 6.
2.
Stuff the main cavity of the chicken with the whole head of garlic. Arrange the separated garlic cloves in the base of a roasting tray.
3.
Rub the chicken all over with the olive oil. Sprinkle the ground spices on top and season with salt. Sit on top of the garlic cloves in the roasting tray. Place the bay leaf on top of the chicken.
4.
Roast for 1 hour 10-20 minutes until the juices run clear when a thigh is pierced.
5.
Remove and allow to rest, loosely covered with aluminium foil, for 10 minutes before serving.
