- 4 small Goat cheese
- 4 Tbsps ground almonds
- 2 generous pinches Lemon peel
- 2 Tbsps breadcrumbs
- 2 Tbsps freshly chopped Fresh herbs (such as rosemary, parsley, thyme)
- 3 Tbsps olive oil
- salt
- freshly ground peppers
Preparation steps

Preheat the oven to 220 ° C top heat.

Place cheese on a lined with parchment paper baking dish. Combine almonds with lemon zest, breadcrumbs, herbs and olive oil, season with salt and pepper. Spread on cheese and bake in preheated oven at 220°C (approximately 425°F) for about 6-8 minutes or until golden brown.

Serve with lettuce, if desired.
