Ingredients

For the applesauce
1 Red onion
1 garlic clove
3 centimeters fresh ginger
2 sweet and tart Apple (such as Topaz)
1 Tbsp butter
salt
1 generous pinch Sambal oelek
100 milliliters vegetable stock (from a jar)
1 Tbsp lemon juice
1 generous pinch sugar
cayenne pepper (for dusting)
For the garlic carrots
500 grams carrots
salt
4 garlic cloves
2 Tbsps soybean oil
½ tsp sugar
1 Tbsp lemon juice

Preparation steps

For the applesauce, peel onion and garlic and chop. Peel ginger and finely grate. Peel apples, quarter, remove core and cut apple into 1 cm (approximately 1/2 inch) cubes. Melt butter in a saucepan, saute onions and garlic until soft, add apples, saute briefly, add ginger, saute while stirring and season with salt and sambal oelek. Add vegetable stock, cook until soft and season to taste with lemon juice, salt and sugar. Remove from the heat and let cool slightly. Serve sprinkled with cayenne pepper.

For the garlic carrots, peel carrots, cut lengthwise into 2 mm (approximately 1/10 inch) thick slices and blanch in a pot of boiling salted water for 1 minute. Drain, rinse with cold water and drain again. Peel and chop garlic. Heat oil in a large frying pan, saute garlic, remove from the pan and set aside. Add carrot to the pan and saute briefly, sprinkle with salt and sugar, continue to cook while stirring for about 2 minutes, add garlic, mix, sprinkle with lemon juice, arrange on warmed plates and serve with applesauce.
