Ingredients

4 Tbsps lemon juice

1 ½ kilograms salted Fresh ham roast (with rind)
2 Tbsps clarified butter
For the fruit compote
1 Apple
1 handful Cranberry
2 sprigs rosemary
2 Tbsps butter
2 Tbsps honey

Preparation steps

For the glaze, heat apple jelly and stir in lemon juice and cayenne pepper in a saucepan. For the hame, rinse ham in cold water and pat dry. With a sharp knife, score ham rind with shallow cuts in a diamond shaped pattern. In a roasting pan, heat butter and sear meat on all sides. Add 200 ml (approximately 1 cup) water to pan. Brush a little glaze over ham and bake in preheated oven at 175°C (approximately 350°F) for about 90 minutes. Baste with glaze frequently during cooking time.

For the fruit compote, peel apple and cut into quarters, remove seeds and cut into wedges. Rinse cranberries, drain and wipe dry. Heat butter in a frying pan and fry apple slices and add cranberries and sauté. Rinse rosemary and strip needles and stir into pan with honey. Cook over medium heat and let caramelize slightly.

To serve, carve ham into slices and garnish as desired with fruit compote.
