300 grams Pastry flour
2 tsps baking soda
2 tsps ginger
1 ½ tsps Ground cinnamon
½ tsp Ground allspice
1 pinch salt
80 grams pickled candied ginger (glazed ginger)
100 grams butter
3 Tbsps sugar beet syrup
175 grams cane sugar
1 egg
sugar (about 50 grams)
Shredded coconut (about 50 grams)

Preparation steps

In a bowl combine flour, baking soda, ginger, cinnamon, allspice and salt. Finely chop the candied ginger.

In a small saucepan melt the butter and let cool. Stir syrup, sugar, 2 tablespoons coconut flakes and egg. Add the majority of the flour mixture and the ginger and knead to a smooth dough.

With a small spoon scoop out small portions of the dough, about the size of small finger-sized sticks, roll in sugar and coconut, cool well. Put the ginger sticks onto a lined baking tray and distance them (about 3 cm, approximately 1 inch) apart. Preheat the oven (180°C, second shelf from the bottom) (approximately 350°F) and bake for about 10 - 12 minutes.
