Ingredients
125 grams Whole wheat flour
100 grams Rye flour
250 grams Whole wheat flour
150 milliliters lukewarm milk
100 milliliters Apple juice
1 tsp Caramel food coloring
75 grams grated Apple
75 grams grated carrots
75 grams Hazelnuts
1 tsp salt
1 tsp honey
1 cube fresh Yeast (42 g)

Preparation steps

1.

Mix yeast in lukewarm milk until smooth and mix in honey and caramel. Mix three types of flour, apples, carrots, hazelnuts, salt and apple juice in a mixing bowl and mix in dissolved yeast mixture and knead with dough hook or hand mixer to form an elastic dough. Add flour or water, as needed. Cover dough and let rise in a warm place for about 45 minutes.

2.

On a floured surface, knead dough and shape into a loaf and place in greased loaf pan. Cover and let rise for about 15 minutes. Sprinkle dough surface with water and bake in preheated oven at 200°C (approximately 400°F) for about 35-40 minutes. Allow to cool briefly in pan and remove from pan and cool on a wire rack. To serve, cut into slices.
