200 grams blue Grape
4 Mandarin orange
125 grams Emmentaler cheese
40 grams Walnut
2 slices Toast
1 Tbsp butter
2 garlic cloves
For the dressing
3 Tbsps sunflower oil
1 tsp sharp Mustard
1 tsp Maple syrup
salt
freshly ground peppers

Preparation steps

Rinse the endive, trim, spin dry and cut into thin strips. Rinse the grapes, cut in half and, if necessary, remove the seeds. Peel the tangerines and cut the fillets, collecting the juice. Squeeze out the remaining pulp. Dice the cheese and chop the walnuts. Cut crusts off toast slices, cut into cubes and fry in hot butter in a skillet until golden brown. Drain on paper towels. Peel garlic cloves and blend with the tangerine juice, oil, mustard and syrup in a blender. If necessary, add a little water and season with salt and pepper.

Mix endive with cheese, grapes, walnuts and mandarin fillets and transfer to plates. Pour dressing over salad and serve sprinkled with croutons.
