0.333 cup butter
5 Tbsps caster sugar
3 Tbsps all-purpose flour
¾ cup chopped almonds
1 cup mixed, chopped candied citrus peel
1 ¾ ozs Candied fruit (chopped)
To decorate
Chocolate chip
5 ozs Dark chocolate (70% cocoa solids)

Preparation steps

1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Line 2 large baking trays with non-stick baking paper.

Heat the butter and sugar in a pan until melted. Heat until the mixture becomes golden brown.

Remove from the heat and stir in the flour. Add the almonds, peel and candied fruit and mix well.
4.
Put teaspoonfuls of the mixture widely spaced apart onto the baking trays and flatten slightly. Bake for 10 minutes, then sprinkle with chocolate chips. Cool on the trays.
5.
Melt the plain chocolate in a heatproof bowl over a pan of simmering (not boiling) water. Spread chocolate onto the flat side of each Florentine and leave to set.
