- 3 eggs
- 1 cup Sour cream
- ⅜ cup cream
- Nutmeg
- 11 ozs frozen Puff pastry (thawed)
- flour (for the work surface)
- 3.333 cups Salmon fillet (cut into bite-sized pieces)
- 2 ripe Pear (1 finely diced, 1 thinly sliced)
- 2 scallions (sliced into fine rings)
Preparation steps

Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and grease a tart tin with butter.

Whisk the eggs with the sour cream and cream and season with salt, ground black pepper and nutmeg.

Roll out the pastry on a floured surface to the size of the tin and line the tin with it. Use a fork to prick the bottom all over, then pour in the egg mixture. Arrange the salmon and the pear slices on top in a fan, pressing gently into the egg. Arrange the spring onions and diced pear in the gaps.
4.
Bake the quiche in the oven for 30-35 minutes until golden. Take out of the oven and serve immediately.
