- 2 cups Raspberries
- ¾ cup powdered sugar
- 1 egg
- 11 ozs plain Yogurt
Preparation steps
1.
Puree half the raspberries with 1 tablespoon of icing sugar.
2.
Beat the egg with the remaining icing sugar until light and creamy and stir in the yoghurt.
3.
Mix about 1/4 of the yoghurt mixture with about 1/3 of the raspberry puree.
4.
Mix the remaining yoghurt mixture with the whole raspberries.
5.
Spoon a layer of the yoghurt-raspberry mixture into 8 x 100ml moulds and freeze for about 30 minutes.
6.
Cover with a layer of raspberry puree, then a layer of the yoghurt-raspberry puree mixture.
7.
Insert a wooden stick into each and freeze for 3-4 hours until firm.
