½ cup powdered sugar (sifted)
2 cups frozen Raspberries
4 Tbsps runny honey
2 ¼ cups natural low-fat Yogurt

Preparation steps

1.
Put the icing (confectioners) sugar into a food processor with the raspberries and blend until smooth.
2.
Add the honey and yogurt and blend again to combine.
3.
Spoon into a freezer- proof container; seal and freeze for at least 5 hours.
4.
To serve: remove the ice cream from the freezer for 20 minutes to soften slightly. Dip an ice cream scoop into a jug of hot water and scoop 2 balls of ice cream into a serving glass. Repeat with the remaining ice cream.
5.
Decorate with fresh raspberries.
