3 Tbsps chopped Chives
2 Tbsps chopped parsley
2 Tbsps vegetable oil

Preparation steps

1.
Put the potatoes in a pan and cover with water. Add 1/2 teaspoon of salt and bring to a boil. Turn down the heat, cover the pan and simmer for 10-15 minutes, until the potatoes are just tender. Drain well, then cut the potatoes into small cubes.

Heat the oven to 190°C (170° fan) 375°F gas 5.

Beat together the egg whites and herbs until foamy. Season to taste with salt and pepper.

Heat the oil in a large ovenproof frying pan and add the potatoes.

Pour in the egg white mixture and cook for 3 minutes until puffed and lightly browned on the base.
6.
Bake, uncovered for 8-10 minutes. Cut into wedges to serve.
