- 2 medium Zucchini (finely diced)
- 6 large eggs
- ⅜ cup Whole milk
- 1 cilantro (finely chopped)
- 1 cup bay leaves (to garnish)

Preparation steps
1.
Preheat the oven to 180°C | 350F | gas 4.
2.
Heat the olive oil in a large, ovenproof frying pan over a medium heat and sauté the courgette for 3-4 minutes, stirring occasionally.
3.
Meanwhile, whisk together the eggs, milk, chopped coriander and some seasoning in a mixing bowl.

Pour the egg mixture on top of the courgette and reduce the heat to low.
5.
Cook for a minute on the stove before moving the pan to the oven to finish cooking for 5-7 minutes until golden brown and set.
6.
Remove the pan from the oven and run a palette knife around the edge of the tortilla to loosen it.
7.
Carefully turn the tortilla out onto a chopping board and cut into slices. Stack the slices on serving plates and serve with the rocket as a garnish on the side.
