- 1 kilogram waxy potatoes
- Salt freshly ground pepper
- 100 grams Bacon
- 2 Leeks
- 4 Tbsps clarified butter

Preparation steps
1.
Scrub potatoes and cook in boiling salted water, 20-25 minutes. Drain, peel and let cool.

Cut bacon into pieces. Rinse, trim and slice leek crosswise into rings.

Slice potatoes. Heat 1 tablespoon clarified butter in a large nonstick skillet. Add bacon and fry until crisp. Remove bacon from pan and drain on paper towels.

Add remaining clarified butter to the pan. Add potatoes and cook until crispy and browned, turning occasionally, about 20 minutes. Add leek in the last 5 minutes of cooking time. Season with salt and pepper. Mix in bacon. Serve with meat aspic, if desired.
