- For Chicken Kebabs
- 3 Tbsps honey
- 4 Tbsps Oil
- ½ tsp ground cilantro
- ¼ tsp cayenne pepper
- 4 Tbsps lemon juice (or lime juice)
- 2 Tbsps soy sauce
- 2 whole, boneless and skinless Chicken breasts (4 pieces)
- wooden Skewer
- freshly ground Black pepper (to taste)
- Oil (for grill grate)
- 1 fresh lemon (cut into wedges)
- For Guacamole
- 3 ripe Avocados (peeled and chopped)
- 1 medium onion (finely chopped)
- 2 green chili peppers (seeds removed; finely chopped)
- 2 Tbsps lemon juice
- salt (to taste)
- freshly ground Black pepper (to taste)
- 1 ripe Tomato (trimmed; seeds removed and finely chopped)
- For Sweet Corn
- 2 cups frozen, sweet Corn
Preparation steps

For Chicken Kebabs:

Stir the first six ingredients together in a large bowl.

Rinse the chicken under cold running water and pat dry with paper towels. Slice the chicken into 1/2-inch wide strips and add to the marinade mixture. Place in the refrigerator to marinate for 1 hour.

Preheat an outdoor grill for high heat and lightly oil grate. Thread the chicken onto skewers. Season with pepper, to taste. Grill the chicken, 2-3 minutes each side, or until juices run clear and chicken is cooked through.

Divide between plates and serve with guacamole and sweet corn, garnish with lemon wedges.

For Guacamole:

In a medium non-reactive bowl, whisk avocados, onion, chili peppers, lemon juice, salt and pepper until creamy. Gently stir in the tomato.

Cover with plastic wrap making sure the plastic touches the guacamole to prevent the air from discoloring the dip. Chill for at least one hour prior to serving.
