Ingredients

4Chicken drumstick
4Chicken thigh
¼ cupsbleached All purpose flour
1 pinchdried oregano
coarse salt to taste
freshly ground Black pepper top taste
2 tablespoonsunsalted butter
2 tablespoonsolive oil
1small onions finely chopped
2 clovesgarlic finely chopped
½ cupsdry white wine
4Roma tomatoes peeled, seeded and chopped
fresh Oregano Leaf for garnish

Directions

1 Wash and pat dry the chicken pieces.
2 Season the flour with dried oregano, salt and pepper. Lightly dust the chicken with flour; shaking off any excess.
3 Heat the butter and olive oil over medium heat in a heavy skillet. Add the chicken pieces; brown well for 5 to 10 minutes, turning frequently. Remove chicken from the pan and set aside.
4 Drain any excess fat from the skillet. Add chopped onion and cook for several minutes until translucent. Add garlic and cook until fragrant. Add the wine and bring to a quick boil, stirring and scraping any bits and pieces in the bottom of the pan. Add the chopped tomatoes, stirring to combine. Return the chicken to the pan. Cover and simmer for 15 minutes or until the chicken is cooked through.
5 Divide between plates. Sprinkle with fresh oregano leaves. Serve.
