800 grams waxy potatoes
vegetable oil (for frying)

Preparation steps

1.

Peel and rinse potatoes, cut with a kitchen knife into sticks (about 1 cm diagonally) (approximately 1/2 inch). Rinse potato strips in a bowl with cold water. Drain on paper towels and pat dry well.  

2.

Heat oil in a saucepan up to 160°C (approximately 320°F) and cook fries, few at a time, for about 3-4 minutes or until pale yellow.

Remove from the oil with a slotted spoon and drain on paper towels. Cool.

Increase oil temperature to 180°C (approximatley 350°F) and fry fries until golden brown and crispy. Remove from the pan and drain on paper towels. If desired, keep warm in preheated oven at 100°C (approximately 200°F) while the rest of french fries are cooked. 

5.

Season with salt and serve.
